KUNG FU KITCHEN

FLYING ROTI CANAI (MALACCA, MALAYSIA). The roti canai is a round flat pancake popular in Malaysia and Singapore. Of south Indian origin, the roti is fluffy inside, crisp outside. The original movements to stretch the dough has gone through several variations over the centuries but none so spectacular as the evolution of flight. This is the roti canai terbang, or the flying roti, and the identified flying object of our kungfu kitchen challenge this episode. Benoit Chargy is the executive pastry chef at a high class hotel in Kuala Lumpur. Having heard about the legendary flying bread and the opportunity to learn the intricacies, Benoit plunges in to the challenge. Can he impress a paying clientele with less than 3 days of training?
